Cold Canning! New Way I Can my Veggies! Will Save you Hundreds of $$$ and Time! We are heading into canning season and this is my new way to can! No more sweating in the kitchen!

Brine Recipe:
4 large onions
4 garlic bulbs
2 cups dried dill
1/2 cup pickling spice
1/2 cup Redmond sea salt or 1/4 cup pickling salt
Apple Cider Vinegar
Rough chop the onions and garlic and place it in a glass gallon jar. Then add in the dill, pickling spice and salt. Remember you can add in any other flavoring into the brine like hot chilies etc. Fill with jar full with apple cider vinegar. Place a lid on the jar and put it in the fridge for a month before using.
For each jar use 1 cup of dried veggies and add in 1 cup of brine with 2 cups of water to a 1 quart canning jar. Place the lid on the canning jar and put it in the fridge for 24 hours. After 24 hours, enjoy your cold canned goods!

    How to hydrate dried veggies. this is not canning. good idea but misleading. Too salty for me. Darn. I prefer naturally fermented veggies anyway.

    Thank you very much. I have a question, I bought a bag of Stevia powder and it is very hard to wash them as the powder will pass through the rinse.

      @@SJ-gj7mx Place the powder into a tea bag and tie it closed. Then shock it in the hot water and continue to follow the same steps.

    So you dehydrate or freeze dry your veggies. We have been doing those methods for decades. No reason to cold canon. Just a waste of time and energy. So now you are fermenting basically. Nope.

    I was going to try this today after taking in-depth notes but I can’t afford to waste my Stevia if it’s going to be flat or go bad in the fridge after all this effort!! I cringed at the first rinse to get the metallic off, whatever that means, And then, when I saw it boiling, I cringed again, But I kept watching that this was a technique that had been developed and was sure to produce what we all want and that is nice tasting Stevia extract.. But I think it’s fair to ask for what was revealed in the email I know this thread is a year old, but since the video is still running, I am wondering what the solution is to the dilemma of two weeks in the fridge and the Stevia just taste like “nasty tea”… I’m so proud of my crop of Stevia this year and I sure don’t want to ruin it so I guess I’m not gonna try this method until I hear why it failed in the refrigerator…

    Hi do you have to use dried stevia? I have fresh leaves growing on 3 live plants in my yard and I don’t know how to dry them or is that even necessary?

      When the Stevia leaves are mature, pluck them off and dehydrate them. Don’t let the little flowers that are white begin to bloom because your plant will stop making leaves and it will start making seeds. Once you harvest, the mature leaves, your plant will put another flush of leaves out again for a second harvest! After the second harvest, you can let your plant go to seed in the fall, and save those seeds to replant more Stevia, It’s very frost sensitive, and it must be brought indoors to a sunny window to over Winter. Once it gets cold outside, the Stevia will start getting an ugly gray color and it’ll just die! So you should be able to get two great harvest off the plant and a batch of seeds. I just picked my Stevia today it’s July 10. I will check my plant again in one month. Now you dehydrate your Stevia! You can use a dehydrator between 98 and 100° or you can lay your Stevia on a beach towel outdoors and semi shade if it’s hot and dry where you live and they’ll be crispy dry and less than two days.. Clean window screen also, my husband stapled some window screen to long skinny wood frame and that’s my portable outdoor dryer to lay my herbs on when I want to do a lot of Herbs.. Keep them out of sun that makes their leaves burn and get ugly looking.. If the weather is bad, I just use my Excalibur dryer on the Herb setting, Good luck hope this helps🍀

      You use less stevia leaves if it is in it's dried form because the sweetness is concentrated.

    I've watched the original video many times, just to be excited about sprouted foods. I now make sourdough flatbread often for sweet wraps with peanut butter and rhubarb spread, or as pizza base. Thank you Rita for inspiring us to make wholesome homemade food.

    I grind these every day for brunch: hemp hearts, black and white sesame seeds, chia seeds, flax seeds. With water this is my "milk" to eat with dried fruit and nuts. I love adding some Greek yogurt as well. Basically a granola in milk type of food without having to cook. I do roast the sesame seeds in cast iron pan beforehand to activate and bring out the flavor.

      @@olusialovesgod9724 pack 2 tea bags full of powder. Tie them tightly closed. Shock them like I do the leaves and then do all the steps the same with the tea bags as I do with the leaves.

    Hello Mrs Rita, I really enjoy your content, and it's very helpful! I have a question: the liquid stevia extract I made is dark in color, but the one I bought from an online store is almost clear. How does that happen, and what's the difference?

      If the stevia is clear that means that they have laboratory removed the substance from the stevia that makes it sweet. While mine and yours you made are using the entire leave and it is full of Chlorophyll and all the health benefits not just the sweetness.

    Love your video! I learned to alternate my lids like you did but I do every other one so they don't stick together, I think I'll try doing two each direction like you did and see how that works as well.     This is really interesting. I’m thinking your juicer technique would be perfect for making a sprouted pasta-just add egg, knead a little, roll out, and run through the pasta cutter. Couldn’t I use a meat grinder instead of your juicer?

    Yes I volunteer with the Edmonton Organic Growers Guild which donates organic veggies to the Edmonton food banks and I have seen this. In my experience these alb8no peas don't grow as big and don't produce very much peas. Let us know later how much yours produces. I guess the yellow does not have enough chlorophyll as the green ones so it is not as vigorous. Cool though!
